Dessert for Breakfast
I've mentioned in an earlier post how my mom wouldn't allow us to eat dessert until after we had our dinner but this is 2011 and I'm well over 18 so in my kitchen, we can have sweets any time of the day! So the easy part is starting out with waffles and with some chocolate syrup, a spoonful of ice cream, topped whipped cream and a cherry and tada!!!... dessert for breakfast! My favorite waffles are Eggo's strawberry, but of course you can make homemade waffles...
For the Homemade Waffles:
Ingredients:
2 cups flour, measured after sifting
1/2 teaspoon salt
2 tablespoons sugar
3 rounded teaspoons baking powder
2 eggs, separated
1-1/2 cups milk
1 stick butter, melted
2 tablespoons Crisco
Sift flour and measure. Sift again with: flour, salt, baking powder. Beat the egg yolks with the sugar, then milk, and pour slowly into dry ingredients, stirring to prevent lumps.
Stir in melted shortening, beating only until batter is mixed (some lumps will remain), then fold in the two beaten whites. Bake each waffle on a piping hot iron approximately 4 minutes.
NOTE: You may substitute buttermilk for the milk. Reduce the baking powder to 2 teaspoons and add 1/3 teaspoon baking soda instead.
