Mini Pecan Pies

Amanda, my great foodie friend and owner of Imagine Travel and Tours, told me this recipe has been in her family and I suspect for many years. She gave me permission to share this little treat. They come out looking so cute that you just wanna pop one in your mouth! And they're easy to make too, what's so cool about her recipe is that it makes 14 3" pies or a one 9" pie so you can choose which of these you want to make!
Ingredients:
3/4 cup butter
2 cups light brown sugar, packed
3 eggs
1/4 teaspoon salt
1/2 teaspoon vanilla
1-1/2 cups pecan pieces
Pre-baked pie crust, or tart shells
Preheat oven to 350 degrees F. In a large skillet, toast pecans. Remove from skillet.
Add butter to skillet and heat over medium until browned. Reduce heat and stir in brown sugar. Let brown sugar melt a bit and turn off heat. Let cool for about 5 minutes.
In a separate bowl, mix eggs, salt and vanilla. Stir in butter/sugar mixture and pecans. Pour into unbaked pie shell(s). Bake in preheated oven at 350 degrees for 45 minutes.
